Southern Medium Grain Rice Flour

Produced from medium grain rice varieties grown in the Southern United States.  Due to its high amylopectin content, this rice flour is useful in reducing syneresis when used as a thickener in sauces, gravies, and puddings.

Since rice products are essentially non-allergenic, this rice flour is widely recommended for use in special dietary formulations.

Long Grain Rice Flour

Produced from long grain rice varieties.  It is extremely bland organoleptically and, therefore, ideally suited for food applications where minimal flavor interference is desired.

The main application is being an ingredient in extruded ready-to-eat cereals, extruded snack foods and pancake as well as waffle mixes. The bland flavor of rice flour also makes it a desirable ingredient in binder mixes for meat patties, sausages and as a carrier for seasonings and spices.

As this flour is produced from parboiled long grain rice, it has a lower viscosity solution in hot and cold water being less sticky, and non-hygroscopic.

Rice Gel® L-100 is a specially processed precooked rice flour. It is extremely organoleptically bland (with virtually no noticeable cereal taste), and has a high water absorptive capacity. The product easily blends with other dry materials and, like most other rice products, is free from allergenic factors.

This product can be used as a thickener, binder, or extender and has great freeze-thaw stability.  It also easily  blends with other dry ingredients.
